Chocolate mousse is always a favorite! We are lucky enough to be able to use thisr ecipe from Pattisserie-Chocolatier. Give in to your desires and the incredible aromas of this delicious dessert. After all, who doesn't love chocolate mousse?

  • Pot
  • Electric hand mixer
  • Hand Whisk
  • Spatula
  • Mixing bowl
Materials

Serves 5-6 people

  • 190 g of baking chocolate
  • 80 g ou 10 cl liquid creme fraiche
  • 32 g de sugar
  • 5 egg whites
  • 2 egg yolks
Directions

Prepare the ingredients for the chocolate mousse

  • Break the chocolate into small pieces.

  • Melt at 40/45°C on the stovetop.

  • Boil the cream and pour in into the melted chocolate in three rounds.

Mix the chocolate mousse together 

  • Stir the egg whites and sugar.
  • Mix the egg yolks and chocolate together with the whisk.

  • Immediately add the well beaten sugar/egg white mixture in two or three rounds with a wooden spoon.

  • Pour into the mixing bowl and refrigerate for a minimum of two hours.
Tips
  • To make sure the egg whites are thick enough, place a spoon into the mixture and pull up; it should be a little difficult to pull it back out.

  • 15 g of synthetic sugar equals 1 spoonful of sugar.
